This all came about a few weeks ago when i mentioned that i was scared to cook fish, and someone suggested we add cooking to our planned sleepover. It's funny. I'm great with soup- can make anything following the recipe or improvising- i've never been intimidated by it. Fish though, probably because i was never a huge fan of it, has always been a little scary. So they came to help and it turned out great! We even had a good breakfast in the morning. Portia made the blueberry muffins i missed out on last time! Next is shirl's turn. We're making homemade pasta and some sort of sauce- can't remember what kind right now.
I am finally setting up my very own blog. Who knew...just a few years ago the term "blog" meant nothing to me. While I knew it had to do with internet postings, I figured it was only for those computer savvy people out there. Fast forward to present time, and you find me addicted to no less than five blogs which I read religiously and cry when they're not updated regularly.

I had some company wednesday night. Portia and shirl trekked over in the snow to cook fish with me. On the menu? Tilapia with a garlic curry rub, roasted pepper salsa to top it off, and a side of asparagus. Dessert was brownie/peppermint ice cream sundaes.

whoa, i guess i am the opposite because i cook more fish than any other foods (e.g., meats, veggies, etc). its so fun to go to the market and see which fish is fresh that day.

Ya. That's why we picked fish- since I was scared of it. I think it's mostly because i've never been a huge fan of seafood, and have been making myself try it more to find fish that i like. Now i know it's super easy and will be all over it. The funny thing is that we were talking about foods we're nervous to make, and found that what's easy for some people isn't for others. I've always loved soups- never been intimidated by them at all, but i know several people who are scared cooking soup! Now fish (at least tilapia) is in my repertoire.
We orignally found a recipe for tilapia with a mango salsa, but since mangoes are out of season, we used peppers instead. So we started by making a curry, olive oil, and garlic rub that we painted on the tilapia, then used cilantro, onion, peppers, jalapeno, and some other stuff for the salsa. Cooked up asparagus and we were set. Delicious!
ah, tilapia is a good fish for people who dont necessarily like fish. tilapia does not have much flavor of its own but has good texture. and it takes on the flavoring of whatever you cook it with. other fish like that include: mahi mahi, mako shark, and swordfish.
I love fish, but hate tilapia. I really can't stand it. This is interesting.
