*blah* I ate too much macaroni and cheese tonight. This happens everytime we make it (which thankfully isn't so often). Somehow, as I spoon the annie's into my bowl, I think that I'm starving. Soon after polishing it off, I'm always slightly queasy. I think it continues to expand once it's in my stomach. You'd think I'd learn by now, and only take a half bowl. I guess not.

Ooh, if you want good mac and cheese (and easier portion control), you can do that and work on your cooking skills, two birds with one stone! Just make the mac and cheese recipe from the Bouchon cookbook (or basically any good cookbook, for that matter.) It's a Mornay sauce, so you get to practice making a classical sauce (it's just a roux with milk, some cream, and cheese -- a Bechamel sauce with cheese, really) and you get mac and cheese that is about 100x better than anything that comes in a box.
Then, get some cheap ramekins from Sur La Table (mine were $3 each) and bake the mac and cheese individually in those -- boiled elbow macaroni sauced with the Mornay, topped with bread crumbs, lots of black pepper, and a drizzle of oil -- and you've got perfect individual servings ready!
